Crunchy French Fries, Healthy and Tasty

– Potatoes (guesstimate about two small/medium size potatoes per person)

– Olive Oil

– Salt

– Pepper

– Grated Parmesan cheese (optional)

#1 – Line a cookie sheet with tinfoil or use a non-stick cookie sheet. Spread some olive oil on the tinfoil, to keep the potatoes from sticking.

#2 – (Now for the secret that makes these fries particularly crunchy!) Begin heating a pan full of water on the stove. There should be enough water to cover your potatoes completely once they are cut up.

(Begin heating your oven to 450 degrees F.)

#3 – Peel and cut up your potatoes into 1/2 inch wedges lengthwise. Once your water is boiling on the stove, add the potatoes wedges and return the water to boiling. Let them boil for 2 to 3 minutes.

#4 – Drain the potatoes. Then toss them with some more olive oil, enough to coat them nicely. Add salt and pepper to taste and toss again.

#5 – Spread a single layer of potatoes on your cookie sheet (use two cookie sheets if you have more than one layer of fries). Place in the oven for between 10 and 12 minutes. Then flip the french fries and bake for another 10 to 12 minutes or until golden brown. Leave in longer if you like them crunchy!

#6 – Take out, allow to cool just a little, and enjoy!

Cheesy Fries – add a little extra flavor by sprinkling Parmesan cheese on your potatoes prior to cooking them for the last 10 to 12 minutes!

Chili Fries – sprinkle a little chili powder and paprika to give them a different taste!

Garlic – sprinkle with garlic powder when you add the salt and pepper!

Extra Healthy Fries – leave the skins on your potatoes for extra vegetable fiber and unique fries!
